Our raw honey is naturally light in colour, which is completely normal for pure, unprocessed wildflower honey. Its creamy and smooth texture gives it a lighter appearance compared to regular liquid honey. If heated, it becomes darker in colour and turns into a liquid form. Since we never heat our honey, its light yellow shade remains a natural characteristic — a true sign of its purity and quality.

Our raw honey is not liquid because pure, unprocessed honey naturally forms tiny crystals soon after it’s extracted from the honeycomb. This gives it a creamy texture and denser consistency compared to commercial honey, which is often heated (or even overheated) to prevent crystallization and maintain a clear, liquid appearance. However, this heating process removes many of the honey’s beneficial nutrients. That’s why we never heat or pasteurize our honey — to keep it raw, creamy, and packed with natural goodness.

Yes and no! Mellona raw honey does crystallize naturally, but in a completely different way from ordinary honey. Due to its floral origin and the fact that it’s never heated or processed, it forms tiny, fine crystals that create a pleasant, smooth, and creamy texture — not the coarse, sugary texture found in regular crystallized honey.

We only use totally natural ingredients — as much as possible raw and unprocessed. We never use preservatives, artificial flavourings, or colours. Every ingredient is carefully selected for its flavour, nutritional value, and health benefits.

Store at room temperature, preferably below 23°C. Keep in a dry and dark place. Store away from strong odours.

For raw honey, during hot summer months, you can refrigerate it if you don’t want it to become very soft or liquid. Conversely, during cold winter months, honey may become very hard — simply place it in a warmer spot and it will return to its smooth, creamy texture. 

For olive oil, it may become cloudy if stored very cold — this is completely normal and does not affect its quality.

Functional” means that the active ingredients in the product work in a specific way to provide targeted health benefits. These benefits can include combating inflammation, controlling free radicals and oxidative stress, supplying rare amino acids, soothing the digestive system, and helping to relieve constipation.

This happens because each hive produces honey that can vary slightly in colour and other physical characteristics. We do not intervene — we package the honey straight from the hive into the jar. As a result, no two batches are exactly alike, and it’s not an exaggeration to say that no jar is identical to another.

Another reason is that raw honey is a living product and naturally darkens over time. Its colour can change depending on storage conditions such as temperature and exposure to light — the longer it is stored in a warm or bright environment, the darker it becomes.

No. Never.

However, during winter, when cold days last longer than usual, the bees may exhaust their honey reserves. To help them survive until the next flowering season, the beekeeper carefully provides a special bee feed that supplies energy, essential minerals and vitamins. This support ensures the bees stay healthy without compromising the natural quality of the honey.

Mellona extra virgin olive oil has a high polyphenol content, typically over 500 mg/kg, which contributes to its strong antioxidant properties and health benefits. This high level of polyphenols is achieved through careful practices: the olives are harvested early while still green, hand-picked, and milled soon after harvest. The oil is then cold-pressed to preserve its natural compounds. Additional factors, including our Koroneiki variety and the favourable growing conditions in Cyprus, further enhance its rich polyphenol content.

One reason is that it is unfiltered. While it may not appear crystal clear, you can rest assured that it contains all the goodness of fresh olives, including a high phytonutrient content and rich polyphenols.

Cold conditions can increase this cloudy appearance. This is completely normal for high-quality extra virgin olive oil and will return to its usual clarity when stored for some time in a warmer environment.

Absolutely! However, if you want to preserve the nutritional properties of raw honey, it’s best to let your tea cool for a couple of minutes before adding it. Raw honey may require a little extra stirring to dissolve, but the result is definitely worth the effort!

Opening the jar does not directly affect the shelf life of raw honey. However, you need to be careful not to accidentally introduce crumbs or other small particles that could compromise its purity. Most importantly, avoid adding any liquids, as this increases the moisture content and may cause the honey to ferment or spoil.

Yes, but…

Though extra virgin olive oil can be used for cooking (and it’s far better than most other oils), we feel that our oil is so exceptional that it deserves to be used raw, allowing it to fully express its flavour and aroma. This way, you also gain the maximum from its beneficial nutrients.

There is no added sweetener — no sugar, no glucose, and no other type of sweetener. All the sweetness comes from the naturally occurring sugars in the fruits, which are packed with healthy nutrients.
